Applicative laboratory - Laboratory test
- Recipes are then evaluated for their ability to be processed depending on the final application. The R&D team is able to test technical yield of recipes using ice cream maker, oven cooking.
- The industrialisation of the product is firstly tested through a pilot plant. On a second stage, a pre-industrial batch is done on the dedicated plant.
- Customer’s sampling can thus be done to get the final approval before new manufacturing.
Tools
- Formulation can be evaluated on the colour of recipe by chromametry.
- The viscosity before cooking can be determined, to evaluate the potential processability of dough, and its transportation through industrial equipment.
- Several recipes can be done as a starting point for various applications as ice cream, dough preparation and dough cooking using industrial ice maker and industrial oven, in our R&D lab.
